High Protein Brownie

This brownie recipe by Mikki Williden has quickly become a fave of mine! I make this nearly every week! Per serving it contains at least 38g of protein in a serve! A great way to start your day, keeps you satiated and if you have a bit of a sweet tooth like me this is great way to start your day.  I enjoy mine with a serve of home made coconut yoghurt, blueberries and @nothingnaughty chocolate fibre syrup! Soooo good!

Serves 4 

Macros without additions per serve 

180g 

P 38g C 10g F11g  327kcal

 

RECIPE BELOW ⬇️ 

400g cauliflower rice 

120g vanilla or chocolate protein powder  ( you can also throw in a couple of serves of kids good stuff here too, i.e 100 grams protein, 20grams KGS)

1/4 cup cacao powder

1 tablespoon baking powder 

1/2 cup almond meal 

1/4 cup psyllium husk 

1 tsp salt

3 tablespoon monk fruit sweetener or alternative 

3/4 cup egg white 

3/4 cup unsweetened almond milk

 

Method 

 

 Preheat oven, fan bake 170degrees Celsius

 

Add all ingredients to a blender and blend until well mixed. Wait at least 10 minutes for psyllium husk to bloom. Place mixture in a square tray lined with baking paper. 

 

Place in oven and cook for 25-30 mins or until knife comes out clean. 

 

Once cooled cut into four servings and enjoy with your fave toppings. I enjoy mine with nothing naughty chocolate fibre syrup, coconut and fresh yoghurt!
