Banana bread is delicious, nutritious, and perfect for a quick snack or breakfast on the go. You will love this version, it is light and fluffy and has a bit of a nutrient boost with the addition of Nuzest Vanilla Clean Lean Protein and Kids Good Stuff in Vanilla Caramel. Ingredients
- flesh of 3 ripe bananas (300 grams)
- 1/2 cup rice malt syrup
- 50g coconut cream (I used kara)
- 2 tablespoons smooth peanut butter
- 2 eggs (
- 1 teaspoon ground cinnamon
- 1/2 teaspoon bicarb soda
- 120g buckwheat flour
- 90g almond flour
- 20g Nuzest Vanilla Clean Lean Protein
- 20g Vanilla Caramel Kids Good Stuff
Method
- Preheat your oven to 160°C. Grease and line a loaf tin with baking paper.
- Place the ingredients into your processor and blend until the mixture is smooth and well combined.
- Pour the mixture into your prepared tin and bake for 35 minutes, cover with foil, rand bake for a further 10 minutes. Remove the bread from the oven and leave in the tin for 10 minutes before carefully transferring to a cooling rack to cool completely.
Thermomix Instructions
- Preheat your oven to 180°C. Grease and line a loaf tin with baking paper.
- Place the ingredients into the bowl and blend at speed 10 for 10 seconds.
- Pour the mixture into your prepared tin and bake for 35 minutes, cover with foil, reduce the heat to 160° and bake for a further 10 minutes. Remove the bread from the oven and leave in the tin for 10 minutes before carefully transferring to a cooling rack to cool completely.
Tips
- You could switch out rice malt syrup for honey or maple.
- If you do not have vanilla protein powder or KGS, replace with 20g buckwheat & 20g almond flour.
